Now that the weather is finally warmer, I’m all about the iced coffee. Instead of spending money at Starbucks, I’ve created my own iced latte without any added sugar or artificial flavors. It’s whole30 approved, too!

I’m not sure if you know the amount of sugar that comes in a PSL at Starbucks, but… it’s not good. Why not have a pumpkin flavored treat that tastes good AND is good for you?

All you need for this is a cup of hot coffee, almond milk, pumpkin puree, maple syrup, coconut oil, and pumpkin pie spice blend! Pour it in a cute mug, slip on a robe, and light a fall scented candle and enjoy. 🙌🏼

This paleo vanilla coffee “creamer” is great to prep on Sunday for your workweek, is only four ingredients, and takes less than five minutes to make.

This paleo vanilla coffee “creamer” is great to prep on Sunday for your workweek, is only four ingredients, and takes less than five minutes to make. Simply store in a sealed jar/container for the week and you can add a little, healthy flavor to your cup each morning. This goes great in cold (my favorite cold brew brand is Stōk) or hot coffee.

I gave up regular coffee creamer years ago. I quickly realized that, although I loved the taste, pouring tons of sugar, preservatives (I dare you to look at the ingredients of regular coffee creamers 😱) and dairy into my coffee was not the best way to start my day.

So I switched over to unsweetened coconut/almond milk. My favorite brand is by So Delicious; their organic nut milk contains only a few, natural ingredients.

With this brand, I have had fun making “creamer” throughout the year, when regular unsweetened nut milk by itself just isn’t doing it for me.

For this vanilla creamer you’ll need:
-1/4 tsp vanilla extract
-1 T maple syrup
-1/8 tsp cinnamon
-1 cup unsweetened nut milk
Put ingredients into a jar/cup with lid, shake well, and store in the fridge for up to a week.

So glad I stumbled upon this Iced Collagen Mocha Latte recipe by @paleomg . This naturally sweet coffee will wake you up and delight your tastebuds. Make a batch, store in the fridge, and shake before serving and you can have this any day of the week!

Ingredients:
-2 cups cold brew coffee (I used Stōk)
-1 1/2 cups almond milk (I used So Delicious)
-1/4 cup collagen peptides (I used Vital Proteins)
-3 tablespoons organic maple syrup
-1 1/2 tablespoon cocoa powder (Or go with cacao... I used Navitas Organic)
-1 teaspoon vanilla extract

Combine ingredients in a blender, and pour over ice. Or, if you want to be extra fancy like me, use coffee ice cubes, (or Coffee Cubes as I like to call them) to avoid a watery drink! I poured some leftover regular coffee into ice molds I bought at World Market and let them freeze overnight. All you need now is to drink up!

Whole30 Dirty Chai Latte

Michelle from @thewholesmiths is currently guest posting over at @whole30recipes , and I’m having so much fun watching her whip up a myriad of different delicious, healthy food. Oh, and, SHE IS HILARIOUS. The insta stories she’s posting are so funny and entertaining, but at the same time super helpful! On a recent story, she made this Whole30 Dirty Chai Latte, and I had to give it a try. I mean, Chai + Coffee + Whole30… count me in.

You can find her video tutorial on how to make this on the @whole30recipes insta highlights labeled “Whole30 Latte.” All you need for this one is some coffee, almond milk (I used So Delicious), chai teabags (I used Equal Exchange), a blender/immersion blender, collagen peptides (optional… I used Vital Proteins) and coconut oil (I bought mine from Trader Joe’s). I also added some cinnamon and cardamom to give it a little extra flavor. It was so easy, tasty, and comforting… it was the perfect warm drink for yet another rainy day here in Asheville. If you have a few extra minutes this weekend, I hope you try it!

Naturally Sweetened Whole30 Coffee

I love the weekend ritual of coffee...enjoying a hot cuppa, hanging out with the family, listening to some music. I don’t like my coffee black, but in my food freedom, I avoid sugar and dairy which makes enjoying my weekend coffee a challenge. I did however recently find a non-dairy milk (@so_delicious unsweetened organic almond milk) that I really love with super clean ingredients (great flavor and consistency). So I decided to experiment and make something that I would enjoy while staying true to my food freedom.

I start by removing the pit of a date and put the date in some hot coffee (approx. ½ c) to soak for a few minutes. I then blend it with my handheld immersion blender until the date is finely incorporated and the mixture is frothy. For me the sweetness of that one date will cover 2 cups of coffee. I then fill my cup with black coffee, add my date sweetened coffee to taste, and top with my almond milk. I like a little sprinkle of cinnamon on top! How do you like your coffee?
